Keeping close links with the surrounding area, Tommy has developed his own unique style in the kitchen, combining age-old methods with dynamic modern innovation. Many ingredients are either from the extensive kitchen garden or foraged close by with emphasis on a short journey from field to plate. His commitment to local sourcing adds great authenticity to a seasonally changing menu.
